Puto Maja No bake

No-Bake Gluten-free Cake with Coconut Custard (Puto Maja)

Perfect easy to make dessert no baking required.

Cooking time: 12 minutes


Puto Maja
Rice cakes are gluten-free, unlike those made with wheat. It doesn't make your tummy ache or bloat (kabag). This week we made this cute cakes for my niece's dessert table for her first birthday party. It was an instant hit! We used Green Leaves Instant Puto (Steamed Rice Muffin Mix) and Green Leaves Coconut Milk Pudding (Maja Blanca). Coconut is our base for any dessert, here in the Philippines we have lots of coconut. It makes any dessert rich, mouth watering and healthy. My kids love making and eating these, the most fun part is decorating our "inventions".


What you need:

For the cake:
1 box   Green Leaves Puto (Steamed Rice Muffin)
            Green Leaves LIquid Pink Food Color
1          Whole egg
1          Tbsp Vegetable oil 
1 cup (240ml)    Water 
3/4 cups (150g) White Sugar (NOTE: for diabetics or those on a strict diet you can use zero calorie sugar such as splenda* substitute 3/4 cup of sugar with 15-18 packets) 

For the custard
1 box      Green Leaves Maja Blanca (Coconut MIlk Pudding)
4 cups (960 ml) Water
3/4 cups (150g) White Sugar (NOTE: for diabetics or those on a strict diet you can use zero calorie sugar such as splenda* substitute 3/4 cup of sugar with 15-18 packets)
2 eggyolks* optional

Instruction:
First we make the puto:
1. Start to boil the water in the steamer before your mix this.
2. Combine all the dry ingredients (Puto Mix 1, Puto Mix 2 (Coconut), Sugar) and mix with a fork or whisk.
3. Add all the liquid ingredients and completely mix.
4. Divide the mixture into two, to make two colors.
5. Add color drop by drop until you reach your desired shade and mix well.
6. Put the white mixture into the pan (I use 6x7 aluminum pan, but you can use any mould). Drizzle the pink on top of the white mixture and created swivel effects using a fork. 
7. Steam for 8 minutes or until a toothpick inserted comes clean.. 

NOTE: timer starts when the water is boiling. Do not over cook because it will shrink. Start to check on 8 minutes timer, and if it's not done yet cover for another 1 minute and check again. Set aside.

If you dont have a steamer, improvise: Place a big cooking pan in the stove, then add water. Put empty cans or wire rack on top of the pan, place your cake and cover the big pan. (will post picture when i get home)






To make the Coconut Custard:

1. MIx the dry ingredients (Maja Mix 1, Mix 2, Sugar)
2. Add the liquid and mix
3. Microwave for 6 minutes using a microwaveable plastic or glass.You can also cook it over a non-stick pan on a stove by stirring constantly for 8 minutes










4.Remove from the microwave and stir briskly, scraping the sides and bottoms to make it uniform in consistency.











5. Put in the microwave again and cook for another 6 minutes.

Microwave oven cooking time differs for every wattage. I used 900 watts, if your wattage is lower than mine, we have microwave conversion in the box.

6. Stir the pudding again.












7. Pour the Coconut pudding in the arte puto. Using a spatula or spoon, level the pudding until puto is all covered. Let cool.










8. When the maja already set, cut into squares and remove from the pan and decorate 
You can put whipped cream, sprinkles, chocolate chip, chocolate, ganache, etc.
